Dukkah Crusted Codfish
Most people think Cod is “boring” or “bland”. Personally, I think it is an elegant fish with subtle flavor and a texture that is both flaky and durable. It is the perfect compliment to the crunch and spice in my pistachio dukkah.
This dukkah crusted cod is so incredibly easy and the result is so special you will deceive people into thinking you’ve put a lot of effort into creating this wonderful main course.
Servings: 1 This can be multiplied for the number of people you are serving. You can also cook a single large filet accounting for 6 ounces per person.
Ingredients:
• 1 6 ounce cod fillet
• 2 tablespoons or more of dukkah
• Salt to taste
• 3 tablespoons butter
• Olive oil
Equipment:
• Baking dish
• Fish spatula
Procedure:
• Preheat oven to 400 degrees.
• Let the cod sit at room temperature for 15 minutes before cooking.
• Season the cod with salt.
• Liberally crust the top of the cod with dukkah. The Dukkah is strong, so a little goes a long way.
• Coat the baking dish with olive oil, place the cod in the dish
• Bake the codfish in the oven for 10-12 minutes or until cooked through
• Remove from oven and serve
